Carmen called last night to brag about a dinner she was making. It served to remind me of a recipe I used to use for pork tenderloin. And man oh man was it yummy.
Take a standard pork tenderloin and butterfly it open. Mix up a can of sourkraut, a couple of potatoes chopped into bite size pieces, bites of carrot and a jalapeno pepper cleaned, deseeded and finely chopped. Spread stuffing inside the tenderloin and roll tight, securing with string.
I use my Pampered Chef stoneware cassarole pan and put a bit of chicken broth in the bottom. I season the outside of the pork with garlic (of course) and spiced pepper. I also like to cut up a strong onion to scatter around the pork as it cooks.
I usually use a 275 degree oven and slow roast it. I plan on about 4-5 hours. Just keep an eye on it, you'll know when it's done.
We used to use this stuffing when we had a hog roast and I liked it so much I hated to save it for just once a year. It's perfect because it has everything you need for a meal all in one pan. EASY clean up.
Anyway, thanks to Carmen's phone call, I'll be making this in the next couple of weeks. I have to. I dreamt about it last night......
